This Smoked Salmon and Asparagus Pasta is Ideal for Date Night

Sometimes we want quick, easy, and simple meals. Sometimes we want fancy and indulgent meals to treat ourselves and our loved ones. Date night is the perfect opportunity to try a more luxurious recipe, and this tasty pasta dish is ideal. Rich, decadent smoked salmon pairs perfectly with fresh asparagus in this super moreish creamy pasta dish. This recipe serves two, but can easily be doubled to feed a crowd. 

Ingredients:

  • Pasta 
  • 8 ounces smoked salmon
  • 10 cherry tomatoes
  • 1 shallot
  • 1 clove garlic 
  • 10 asparagus spears
  • ½ cup double cream
  • ½ cup veg stock
  • ¼ cup lemon juice 
  • ¼ cup fresh parsley leaves
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the shallot and garlic. 
  2. Remove the ends of the asparagus and cut the remaining spear into 2cm sticks. 
  3. Slice the cherry tomatoes in half. 
  4. Cook the pasta according to package instructions.
  5. In a large pot heat some oil and add the shallots. Fry for 5 minutes and then add the garlic, tomatoes, asparagus, paprika, salt, and pepper. 
  6. Fry for 5 minutes before adding the cream, veg stock, and lemon juice. 
  7. Increase the heat slightly and gently simmer for 10 minutes stirring frequently.
  8. Drain the pasta while retaining the pasta water.
  9. Tear the smoked salmon into bite-sized pieces and add to the pot along with the pasta. 
  10. Cook for a further 5-10 minutes, stirring constantly. If the sauce becomes too thick add a little of the pasta water. 
  11. Remove from the heat and stir through the parsley leaves before dividing into bowls ready for serving.
