Tapas is a term which refers to the mini-platters of delicious foods found right across Spain. The types of tapas available vary region to region, although some dishes – such as patatas bravas – are fairly ubiquitous across the country. If you’d like to host your own tapas evening at home, keep these three recipes to hand.
Garlic And Wine Chorizo
Ingredients:
- 1 chorizo sausage
- 4 cloves of garlic
- 1 cup of white wine
- Olive oil
Instructions:
Fry the sliced garlic in plenty of olive oil, until it begins to brown. Add the chorizo (cut into slices), and the wine, and simmer for 5 minutes. The chorizo will release lots of oil into the wine, don’t drain it as this creates a delicious broth to dip bread into. Serve with bread, and a salad.
Blue Cheese With Honey And Walnuts
Ingredients:
- 1 cup of blue cheese
- 1/4 cup of walnuts
- 1/4 cup of honey
Instructions:
Crumble the blue cheese into pieces on a plate. Chop the walnuts into halves or quarters and sprinkle over the cheese, then drizzle some of the honey on top. Delicious served on rye crackers.
Cider Cooked Sardines
Ingredients:
- 1 cup of good quality sardines
- 1/2 cup of cider
- 4 cloves of garlic
- 1/4 cup of parsley
- Olive oil
Instructions:
Fry the garlic in olive oil, then add the chopped parsley to the pan. Add the sardines and cook for about three minutes, before tipping in the cider. Cook for a further five minutes, before removing from the heat. This is excellent when served alongside pan-fried potatoes.
