Three Ways to Use Cherries in Your Cooking

Cherries are a delicious dark fruit which provide a great dose of vitamins and antioxidants. They are also incredibly versatile, working well in sweet and savory cooking. Check out these recipes, which really let these little fruits shine.

Dark Chocolate and Cherry Pots

Ingredients (to serve 4):

  • 1 cup of dark chocolate
  • 1 ½ cups of heavy cream
  • 1 cup of fresh or frozen cherries
  • 2 tablespoons of maple syrup

Instructions:

  1. Melt the dark chocolate over a low heat.
  2. Slowly whip the cream into the chocolate, whisking until they are well combined.
  3. Chop the cherries in half, heat them over a low heat. When they start to release their juices, add the maple syrup, and stir through.
  4. Stir the cherries through the chocolate and cream. Decant into small pots or glasses and chill in the fridge for at least two hours before serving.

Cherry and Poached Chicken

Ingredients (to serve 4):

  • 1 cup of cherries, frozen or fresh
  • 4 chicken thighs
  • ½ cup of milk
  • ½ cup of water
  • A handful of fresh thyme
  • 2 onions
  • 2 tablespoons of butter

Instructions:

  1. Gently heat the milk and water over a low heat.
  2. Add the chicken and the sliced onions.
  3. Heat for 10 minutes, then add the butter, cherries and thyme.
  4. Cook for a further 20 minutes, and then season with salt and pepper.

Cherry, Mango and Kiwi Ice

Ingredients (to serve 4):

  • 1 tin of coconut milk
  • ½ cup of cherries, fresh or fozen
  • ½ cup of mango puree
  • 3 kiwis

Instructions:

  1. Peel the kiwi fruit.
  2. Place all of the ingredients in a food blender and blitz until smooth.
  3. Pour into a tub and put in the freezer for at least two hours before serving.
