Ingredients

  • 2 cups of all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup of unsalted butter, melted
  • 3/4 cup of granulated sugar
  • 2 large eggs, beaten
  • 3 ripe bananas, mashed
  • 1/4 cup of Greek yogurt or sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup of chopped walnuts or pecans (optional)
  • 1/2 cup of chocolate chips or chunks (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined. In a separate bowl, mix together the melted butter and granulated sugar until smooth and creamy.
  2. Add the beaten eggs to the butter-sugar mixture and mix until combined. Stir in the mashed bananas, Greek yogurt or sour cream, and vanilla extract until well incorporated. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  3. If using, gently fold in the chopped nuts and chocolate chips or chunks until evenly distributed throughout the batter. Pour the batter into the prepared loaf pan and spread it out evenly.
  4. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
