Ingredients

  • 12 ounces of pappardelle pasta
  • 1/2 cup of (1 stick) unsalted butter
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese, plus extra for serving
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Cook the pappardelle pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set it aside.
  2. In a large skillet or saucepan, melt the butter over medium heat. Once the butter is melted, pour in the heavy cream and stir to combine. Let the mixture simmer gently for 2-3 minutes, stirring occasionally. Gradually add the grated Parmesan cheese to the skillet, stirring continuously until the cheese is melted and the sauce is smooth and creamy.
