When the summer heat is on, you need to find starters that are both delicious and refreshing. A refreshing starter is the best way to get your guests in the mood to enjoy your food. Here’s a simple Italian starter that is easy and quick to make, and guaranteed to leave your guests wanting more.

Ingredients

All you need for this starter are large beefsteak tomatoes, fresh mozzarella balls, fresh basil, and extra-virgin olive oil. Make sure you have enough of each to feed your guests. Usually, each diner will have one tomato and one mozzarella ball each.

Preparation

Slice the tomatoes lengthways so that you have four or five long slices for each one. Then, do the same with the fresh mozzarella balls. You don’t need to cook the mozzarella, and it’ll be served fresh with the tomato.

Presentation

Next, arrange each plate so that it has the tomato and mozzarella slices alternately together, and that each tomato slice is bordered by two mozzarella slices, and vice versa. This looks great and makes it easier to eat both ingredients together for the best flavor.

Serve

Sprinkle fresh basil leaves over the tomato and mozzarella slices, and drizzle in olive oil.
