Spanish fried eggs, also known as huevos fritos, are delicious, easy, and also high in calories. The secret is in using plenty of oil—olive oil is the best—instead of just a tiny amount. The first thing you need to do is pour some olive oil into a skillet and heat it over medium-high heat.

Let it become really hot before cracking the egg. If you’re experienced in not breaking the yolk, you can crack it directly into a skillet. Otherwise, use a mug and gently slip the egg from it into a skillet when ready.

Use a spoon to pour the hot oil over the eggs so it will cook evenly from all sides. This will leave you with a crispy egg-white and runny yolk. Sprinkle some salt and pepper before serving.
