Ingredients
- A package of extra firm tofu
- Vegan mayo to taste
- 1 tsps of turmeric
- 1/2 tsps of curry powder
- Salt and Pepper to taste
- 1/4 tpsn paprika
- Green onions for garnish
- Vegan or non vegan bread of choice (Ezekiel bread is a great vegan option)
Instructions
- Pat your tofu dry with a paper towel and remove excess moisture
- Slice your tofu into thin cubes and place in a bowl
- Add your spices and mayo to the tofu and mix until fully coated
- Slice green onion thinly and add to the mix
- Toast bread and add your “egg” salad and some lettuce if desired
