Porridge is a great winter breakfast option, and this baked porridge is just as satisfying and hearty as a bowl of just-cooked porridge. Top with your favorite toppings, or bake them into the porridge to create a lovely layered effect.
Ingredients (to serve 4):
- 1 1/2 cups of porridge oats
- 1 1/2 cups of milk
- 1 1/2 cups of water
- 1 tablespoon of sugar
- 1 1/2 teaspoons of cinnamon
- 1 1/2 teaspoons of nutmeg
- 1 tablespoon of butter
- 2 ripe bananas
- 2 tablespoons of ground mixed nuts
Instructions:
- Heat the butter, sugar, cinnamon and nutmeg in a pan and stir until the sugar melts into the butter. Set aside for a moment.
- Mix the oats with the water and milk, heat in a pan on the stove top for 5 – 10 minutes. If it thickens a lot, add a little more water or milk.
- Mash the ripe bananas and stir them into the oat mix.
- Add the mixed nuts to the oats.
- Stir the flavored butter into the oats, then pour the mix into a greased and lined baking tray.
- Bake in the oven at 350 degrees for 30-40 minutes. Top with fresh berries, yogurt, honey or any other porridge topping you like.
Satisfying and delicious, this makes for a great breakfast on a cold winter’s morning, and you can adapt the recipe to include any sweeteners such as berries, honey or chocolate spread that you fancy.
