Ingredients:

  • 24 ladyfingers (savoiardi biscuits)
  • 1 cup espresso or strong brewed coffee, cooled
  • 1 cup mascarpone cheese, softened
  • 3 large eggs, separated
  • 1/3 cup honey
  • Cocoa powder, for dusting
  • 2 tablespoons Amaretto or Marsala wine (optional)

Instructions:

  1. In a shallow dish, mix the cooled espresso or coffee with the optional Amaretto or Marsala wine. Set aside.
  2. In a large bowl, beat the egg yolks with honey. Add the mascarpone cheese and beat until smooth.
  3. In a separate, clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture.
  4. Quickly dip each ladyfinger into the coffee mixture. Arrange a layer of dipped lady fingers at the bottom of your serving dish.
  5. Spread half of the honey mascarpone cream over the layer of ladyfingers. Repeat with another layer of dipped lady fingers and mascarpone cream.
  6. Refrigerate for 4 hours, or overnight.
  7. Before serving, dust the top of the tiramisu with cocoa powder for a classic finish.
