Try This Simple but Delicious Orzo Dish

Orzo is a rice-shaped pasta that makes for delicious dishes as it soaks up lots of flavor. This recipe is very simple and has tomatoes and chickpeas at its heart. Here’s how to make it.

Ingredients

  • 1 white onion
  • 4 cloves of garlic
  • 1 tin of chickpeas
  • 1 tin of tomatoes
  • 4 medium tomates
  • 10 ounces of orzo
  • 10 ounces of fresh spinach
  • 2 tablespoons of olive oil
  • Smoked paprika
  • 1 cup of parmesan
  • Salt
  • Black pepper

Instructions

  1. Add your finely chopped onions to a pan with your olive oil and fry for 10 minutes. Add your crushed garlic and cook for 5 minutes. Add your chopped tomatoes and fry for a further 5 minutes.
  2. Add your tin of tomatoes and stir in well. At this point you can add some water if it is too thick. Rinse your chickpeas in cold water and chuck them in your pan. You can add your orzo at this point, making sure it has enough water to cook in. Add a generous pinch of salt at this point.
  3. Once your orzo is starting to cook and your chickpeas are softening, you can add your fresh spinach and stir it to wilt it. Add lots of black pepper and smoked paprika. Taste it and add more salt if needed.
  4. Once all your spinach is wilted and your orzo is cooked, you are ready to serve. It will be even more delicious with parmesan on top, but this is optional.
