Warm Up on a Chilly Day With This Carrot and Lentil Soup

As the months get cooler, soup becomes more and more appetizing. Try this bowl of hot, comforting carrot and lentil soup that’s delicious and super easy to make.

Ingredients (For 4 servings):

  • 8 large carrots
  • 2 large onions
  • 2 sticks celery
  • 1 cup dried red lentils
  • 2 cups veg stock
  • 1 tablespoon dried thyme
  • 1 tablespoon dried cumin
  • 2 tablespoons oil
  • Salt and pepper to taste

Instructions:

  1. Chop up the carrots, onions, and celery into small even chunks.
  2. In a large pot, heat the oil. Add the carrot, onion, and celery and fry for a few minutes. When starting to soften, add the thyme and cumin and season to taste with salt and pepper.
  3. Continue to fry the veg until soft and browned. Add the lentils and stir through for a few minutes. Make sure to constantly stir, to stop the lentils sticking to the pot. 
  4. Add the veg stock and increase the heat until it reaches a simmer. Leave to simmer for about 20 minutes, until the lentils are cooked and the liquid has reduced. Keep stirring during this time to avoid sticking. 
  5. You can serve as is, or use an immersion blender to blitz it up if you prefer a smooth soup. Serve with crusty bread.
