As the months get cooler, soup becomes more and more appetizing. Try this bowl of hot, comforting carrot and lentil soup that’s delicious and super easy to make.
Ingredients (For 4 servings):
- 8 large carrots
- 2 large onions
- 2 sticks celery
- 1 cup dried red lentils
- 2 cups veg stock
- 1 tablespoon dried thyme
- 1 tablespoon dried cumin
- 2 tablespoons oil
- Salt and pepper to taste
Instructions:
- Chop up the carrots, onions, and celery into small even chunks.
- In a large pot, heat the oil. Add the carrot, onion, and celery and fry for a few minutes. When starting to soften, add the thyme and cumin and season to taste with salt and pepper.
- Continue to fry the veg until soft and browned. Add the lentils and stir through for a few minutes. Make sure to constantly stir, to stop the lentils sticking to the pot.
- Add the veg stock and increase the heat until it reaches a simmer. Leave to simmer for about 20 minutes, until the lentils are cooked and the liquid has reduced. Keep stirring during this time to avoid sticking.
- You can serve as is, or use an immersion blender to blitz it up if you prefer a smooth soup. Serve with crusty bread.
