Warm Up this Fall With these Simple Autumn Soups

What could be more comforting than nice warm soup to sip on during these chilly fall days? Here are 3 quick and easy-to-make soups that will leave you feeling warmed and refreshed in no time.

Creamy Corn Chowder

This creamy potato, onion, and corn soup is comfort in a bowl. Simply puree roasted vegetables, potato, and onion with low-sodium simmered chicken broth before adding corn, heavy cream, fresh lemon juice, salt and pepper. Then simmer before serving with a sprinkling of bacon on top.

Spiced Fresh Tomato Soup

Add olive oil, red pepper, onion and salt to a preheated baking tray and roast for 10 minutes or until tender, stirring occasionally. Then, add garlic, jalapeno, ginger, tomatoes and water. Simmer for 10 minutes. Once simmered, puree until smooth and serve with toasted pittas.

French Onion Soup

To make this classic, simply begin frying thinly sliced white onions in olive oil in a deep pot. Add salt and cook on a low heat for 10 minutes, stirring occasionally. Once the onions have released their liquid, increase the heat to medium and cook the onions for 40-50 minutes or until they are caramelized. Sprinkle the onions with flour, cognac, one tablespoon of sherry vinegar, and bay leaves. Simmer for 20 minutes before serving with a sprinkling of Gruyere cheese and fresh thyme leaves.
