Ruby chocolate is a new type of chocolate that recently appeared on the market, but why is it so special? The creator of ruby chocolate is Barry Callebaut, who calls it “the fourth type of chocolate,” next to the dark, white, and milk chocolate. Ruby chocolate first appeared in 2017, but it’s just starting to become popular among the consumers and finding its place on the supermarket shelves. Commercially, it first appeared in Japan in 2018 thanks to Nestlé, and since then, many people across the world had the chance to try it.
Callebaut says that ruby chocolate doesn’t come from genetically modified cocoa type, nor that it contains artificial coloring. He claims that its flavor and color are completely natural and unique for this new type of chocolate while keeping its origin a trade secret.
