You Can Achieve Massive Flavor in This Stir Fry in Just Minutes

Stir fries are a great way to feed a big crowd and quickly. You can basically use any ingredients you have on hand with the help of a few key staples. This stir-fry utilizes only four vegetables but each one has a purpose and brings amazing flavor, texture, and color to the dish. If you’re hungry and you don’t know what to make tonight, go for this dish!

Today was a busy day so I apologise for my absence! A little syn-blip over lunch, which wasn’t my fault in all honesty, but yeah! I managed to stay on plan and not use any syns afterwards all day, and I’m still full up from dinner which was absolutely divine (if I do say so myself!). Breakfast was 2 wheatabix (hex b), 150ml semi skimmed milk (hex a) and a handful of blueberries (s). Followed by a coffee with sweetener (f) and 35ml of milk (hex a). Lunch was SUPPOSED to be a subway salad. In honesty I did still eat the salad! Instead of it being in a salad bowl it came in the most syn-filled bread possible, but I am still grateful because it was free 😊 so chicken breast (f) honey mustard dressing (1.5syns), all the salad possible except jalapeños and olives (s+f). AAAAAND… 6inches of 9 grain honey oat bread. If was delicious but I felt so bad bingeing that many syns on a piece of bread 😩 it couldn’t be helped, as not to seem rude, but onwards and upwards! (10 😞). I went to costa with my mumma and had a Pepsi max in a glass with ice (f) instead of my usual hot chocolate which I’m proud of! Dinner was incredible. I can only thank the reduced section in my local Tesco express for the inspiration! Mushroom stir fry, as pictured 😍 so button mushrooms (s), spring greens (s), cabbage (s), red onion (s), peppers (s), carrot (f), egg noodles (f), dark soy sauce (f) and of course frylight (f)! I have got to admit, I am absolutely loving cooking fresh everyday! So much more fun. Also loads of walking today with my little one, must be about 3-4 miles pushing him in the buggy, which is killer. And also I’ve managed to drink 3 litres of water today and I’m still going! So that’s all for today, no more eating 😊🥗❤️

Instructions

  1. Bring a pot of water to a boil.
  2. Heat a pan with a mixture of neutral oil and sesame oil.
  3. Peel the carrots and chop them into matchsticks and start sauteing them in the oil.
  4. While the carrots are cooking, slice up some mushrooms and purple cabbage and grate some fresh ginger.
  5. After about 5 minutes, add in the mushrooms and cabbage as well as a bit of salt.
  6. When the water has come to a boil, add in your noodles and cook for as long as the package says.
  7. After a few minutes of the vegetable cooking, add in a splash of soy sauce, fish sauce, the fresh ginger, and mirin.
  8. Drain the pasta and add to the pan with the vegetables.
  9. Add some more sauces if need be, toss well, and finish with a little rice vinegar off the heat.
  10. Serve and enjoy!
