Zucchini Brownies Are The Real Deal

The much healthier, better version of brownies has just arrived. Zucchini brownies are ready in 45 minutes and super-tasty when cold.

Ingredients

  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup tahini
  • 1/2 teaspoon salt
  • 1/2 cup coconut sugar
  • 1/3 cup chocolate chips
  • 2 tablespoons melted and cooled coconut oil
  • 1/2 cup chopped walnuts
  • 1/4 cup maple syrup
  • 1 cup shredded zucchini squeezed of moisture
  • 2 tablespoons coconut flour
  • 1/2 cup cocoa powder

For the topping you need:

  • 1/2 teaspoon coconut oil
  • 2 tablespoons chocolate chips
  • sea salt

Instructions

Set the oven to 350 F degrees and prepare an 8×8-inch pan.

Completely remove the moisture of the zucchini and add it to a bowl. Mix in the tahini, vanilla, egg, coconut sugar, and maple syrup. Stir all the ingredients, then add the cocoa powder.

Now, include the baking soda, salt, coconut flour and last the melted coconut oil. Add the chocolate chips and walnuts.

Get the baking pan and fill it with the brownie mix. Leave it in the oven for 30 to 35 minutes. Check it with a toothpick before you take it out. Wait for the zucchini brownies to be completely cooled down.

In the meantime prepare the topping. Melt the coconut oil and chocolate chips in the microwave for 30 seconds. Top the brownies with the drizzle and some sea salt.
