A good sauce can be the difference between a bland meal and a really memorable one. Here are 3 simple sauces that you can make at home that will leave your guests wanting more.
Chimichurri Sauce
This vibrant sauce is a favorite in Argentina and Uruguay.
Put 20g finely chopped parsley, 1 tablespoon fresh oregano leaves, 2 cloves crushed garlic, 1 finely chopped red chili, 1 tablespoon vinegar and a pinch of salt into a bowl.
Whisk in 125ml olive oil until it is incorporated.
Season with a lot of black pepper, cover and leave for 30 minutes for flavors to infuse.
Serve over grilles, roasted or barbequed meat.
Real Mint Sauce
Strip off the mint leaves of a bunch of mint.
Sprinkle with a pinch of salt and chop finely.
Place into a jug, add 1 tablespoon caster sugar and pour over 4 tablespoons boiling water.
Stir and leave to cool.
Stir in 4 tablespoons white wine vinegar and your fresh mint sauce is ready!
Parsley Sauce
Melt 25g butter in a saucepan over medium heat.
Stir in 25g plain flour and cook for 1-2 minutes.
Take the pan off the heat and gradually stir in 1 pint of milk until you get a smooth sauce.
Return the heat and, still stirring, bring to the boil.
Gently simmer for 8-10 minutes and season with salt and white pepper.
