Baking is an exact science, and when making swaps it can be really tricky. When cooking, many people swap olive oil for butter since it’s healthier, but can you do the same when baking? The answer is that olive oil can be used instead of butter in most recipes, but not all. Olive oil adds healthy fats to baked goods as well as a unique flavor. So, when can you swap it for butter?

When to Swap

If the recipe calls for melted butter, then you can use olive oil instead. With olive oil, baked goods will turn out moister and a bit more dense than when using butter. When recipes call for room temperature butter, olive oil isn’t a great substitute because most recipes have your cream room temperature butter and sugar together for a light, airy cake.

What Type of Olive Oil Should You Use?

High-quality-extra-virgin olive oil is preferred for cooking and baking. Each brand and type has a unique flavor, so you may have to try a few before you settle on one you like. Olive oils that are mild and buttery with low bitterness and fruity notes work best for baking.

How to Replace Butter with Olive Oil

When using olive oil instead of butter in recipes, you’ll have to adjust the recipe by using three parts olive oil to four parts butter. For example, if the recipe calls for four tablespoons of butter, use three tablespoons of olive oil.
