Delicious Banana Bread Recipe

This banana bread recipe is ideal when you want an easy sweet treat. It’s rich and satisfying while also having a healthy twist on a regular cake. Using ripe bananas helps the texture, but also means less sugar is required as they are super sweet already. 

Ingredients

  • 3 cups plain flour
  • 1 cup demerara sugar
  • 3 ripe bananas
  • 2 eggs 
  • 7 ounces of room-temperature salted butter

Instructions

  1. Preheat oven to 350℉
  2. Line a large loaf tin with baking paper
  3. In a large bowl, mash the bananas until smooth and almost liquid
  4. Add the flour and sugar and mix thoroughly 
  5. Add the butter and stir into the mixture
  6. In a jug, beat the eggs 
  7. Add the eggs to the bowl and mix until everything is well combined 
  8. Transfer the mixture to the loaf tin and put in the oven
  9. Leave to cook for 30-40 minutes
  10. Check the inside is cooked by putting a clean knife into the middle and seeing if it comes out wet or dry – the cooked banana will be wet so take this into account 
  11. Once cooked, place onto a cooling rack and leave for 10 minutes
  12. Best enjoyed warm out of the oven, but also delicious when completely cooled
