This banana bread recipe is ideal when you want an easy sweet treat. It’s rich and satisfying while also having a healthy twist on a regular cake. Using ripe bananas helps the texture, but also means less sugar is required as they are super sweet already.
Ingredients
- 3 cups plain flour
- 1 cup demerara sugar
- 3 ripe bananas
- 2 eggs
- 7 ounces of room-temperature salted butter
Instructions
- Preheat oven to 350℉
- Line a large loaf tin with baking paper
- In a large bowl, mash the bananas until smooth and almost liquid
- Add the flour and sugar and mix thoroughly
- Add the butter and stir into the mixture
- In a jug, beat the eggs
- Add the eggs to the bowl and mix until everything is well combined
- Transfer the mixture to the loaf tin and put in the oven
- Leave to cook for 30-40 minutes
- Check the inside is cooked by putting a clean knife into the middle and seeing if it comes out wet or dry – the cooked banana will be wet so take this into account
- Once cooked, place onto a cooling rack and leave for 10 minutes
- Best enjoyed warm out of the oven, but also delicious when completely cooled
