Easy Vegetable Stir-Fry Perfect for Any Occasion

This stir-fried vegetable recipe will have you cooking delicious dishes in minutes! Just follow these simple steps and you can create powerful vegetable flavors with minimum effort.

Ingredients

For this quick and easy vegetable dish, you will need:

  • 1 bell pepper,
  • 1 bok choy
  • 2-3 cloves of garlic
  • 1 green chili
  • Ginger puree
  • Olive oil

Nicely Chopped

Cut out the core of the pepper, making sure that all of the seeds are taken out. Then, thinly slice the pepper into strips. For the bok choy, cut off the hard end and chop the white stem into disks, and when this is done, finely shred the leafy top. Then, chop the garlic or put it through a garlic press. Thinly slice the chili, being careful to get out all the seeds.

Gently Fry

Fry the peppers in olive oil on medium to high heat, and do this for about 4-5 minutes, or until tender. The best cooked peppers will be firm but soft and juicy to eat. Then, put in the shredded bok choy and fry until it wilts.

Add Marinade

Finally, stir in the garlic and ginger puree and season with salt and pepper. Fry for one minute, and then sprinkle on the fresh green chili. Your dish is ready to be served!
