As much as we try to avoid those carbs, it’s almost inevitable that we’ll return to pasta once in a blue moon. Or once a week. Whatever the case, the next time you do decide to foray back into pasta land, we highly recommend checking out this pesto pasta recipe. Easy to cook, refreshingly tasty, and perfect for both lunch or dinner, this gorgeous dish is great for any cook to know.

Ingredients

  • A bag of your favorite pasta
  • Onion
  • Garlic
  • Pesto sauce
  • Mushrooms
  • Olive oil
  • Coriander
  • Spinach
  • Mozzarella cheese

Boil Pasta

Boil up that pasta to perfection, while being careful not to overcook it. This will usually take around 7-10 minutes.

Sautee The Veggies

While the pasta is boiling, chop up the onion, garlic, and mushrooms, before frying them in olive oil over gentle heat. Leave them there until they’re soft and cooked.

Mix and Serve

Once the pasta is ready and drained, mix in the onion and mushroom mix. Stir in the pot of pesto along with spinach, a drizzle of olive oil, and some slices of mozzarella. Top with a hint of coriander and serve for a refreshingly satisfying pesto pasta!
