Picnic season is well and truly upon us, so make the most of these sunny days by getting outside. Taking lunch with you is a lovely way to extend your time spent in nature, and these recipe ideas will inspire your next picnic.

Omelet Sandwiches

Egg mayo (hard-boiled egg chopped up and mixed with mayonnaise) is a common British sandwich filling, but this option can be more delicious and a little healthier. Make a thin omelet (two eggs beaten together with salt and pepper, chopped green herbs optional) and allow it to cool. Choose some seeded, wholemeal bread if you want to up the nutritional content of your lunch. Spread a thin layer of mayonnaise (or similar dressing) on the bread, and add lots of salad leaves and sliced tomato, before placing strips of the omelet on top to finish the sandwich filling. This picnic option is delicious, protein-rich, and easy.

Filo Parcels

If you buy a pack of pre-made filo pastry from a supermarket, then these little parcels are easy and delicious.

Roll out the pastry according to the packet instructions. Spread a thin layer of pesto inside and add your favorite cheese with some wilted greens. Fold the pastry into a parcel and brush with an egg glaze to give it some shine. Bake according to packet instructions and allow to cool. The beauty of the parcel shape is that these are transportable and easy to eat on the go.
