Ingredients

  • 2 cups of your preferred fresh fruit or vegetables (such as mangoes or red peppers)
  • 1/2 cup of red onion
  • 1/4 cup of fresh cilantro
  • 1/4 cup of white vinegar
  • 1/4 cup of brown sugar
  • 1 teaspoon ginger
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin
  • 1/4 teaspoon red pepper flakes
  • Salt

Instructions

  1. In a medium-sized saucepan, combine your diced fruit or vegetables, chopped red onion, cilantro, white vinegar, brown sugar, minced ginger, mustard seeds, cumin, red pepper flakes, and a pinch of salt.
  2. Bring the mixture to a gentle boil over medium heat, stirring to dissolve the sugar. Reduce the heat to low and let the chutney simmer for 20-25 minutes, or until your ingredients are softened, and the flavors have melded. Keep stirring occasionally. Taste the chutney and adjust the sweetness or spiciness according to your preference.
  3. Remove the saucepan from heat and let the chutney cool to room temperature. Once cooled, transfer the chutney to sterilized jars for storage. Refrigerate the chutney for at least a few hours or overnight to allow the flavors to intensify.
