How to Make Gluten-Free Shortcrust Pastry

When you’re trying to go gluten-free, avoiding goodies like pies and quiche can be hard. Luckily, there are some great gluten-free pastry recipes out there, including this one. Use it to make some shortcrust pastry that is great as a pie crust or as the outside of a quiche.

Ingredients (to make enough for 1 quiche or pie)

  • 1 1/2 cups of plain gluten-free flour
  • 1 teaspoon xantham gum
  • 1/2 teaspoon of salt
  • 1/2 cup of unsalted butter
  • 1 egg
  • 3 tablespoons of water

Instructions

  1. Sift the flour, xantham gum and salt into a large bowl and stir well.
  2. Cube the butter and rub it into the flour to create a breadcrumb-like texture.
  3. Beat the egg and add this to the mix, stirring in with a spoon.
  4. Add 2 tablespoons of water and work it into the dough with your hands. If it’s still dry and crumbly, add the other tablespoon of water.
  5. Roll out the dough so that it’s 1 inch thick, wrap in greaseproof paper and chill in the fridge for an hour.
  6. The pastry is now ready to use as a pie topping or quiche crust.

Going gluten free doesn’t have to mean missing out, as this pastry demonstrates.
