When you’re trying to go gluten-free, avoiding goodies like pies and quiche can be hard. Luckily, there are some great gluten-free pastry recipes out there, including this one. Use it to make some shortcrust pastry that is great as a pie crust or as the outside of a quiche.
Ingredients (to make enough for 1 quiche or pie)
- 1 1/2 cups of plain gluten-free flour
- 1 teaspoon xantham gum
- 1/2 teaspoon of salt
- 1/2 cup of unsalted butter
- 1 egg
- 3 tablespoons of water
Instructions
- Sift the flour, xantham gum and salt into a large bowl and stir well.
- Cube the butter and rub it into the flour to create a breadcrumb-like texture.
- Beat the egg and add this to the mix, stirring in with a spoon.
- Add 2 tablespoons of water and work it into the dough with your hands. If it’s still dry and crumbly, add the other tablespoon of water.
- Roll out the dough so that it’s 1 inch thick, wrap in greaseproof paper and chill in the fridge for an hour.
- The pastry is now ready to use as a pie topping or quiche crust.
