Japanese mochi has become a beloved treat worldwide. The good news is that crafting mochi in your own kitchen can be a fun culinary adventure. Here’s the perfect recipe to create your own mochi from scratch.

Ingredients

  • 1 cup of glutinous rice flour (also known as sweet rice flour)
  • 1/4 cup of granulated sugar
  • 1 cup of water
  • Potato starch or cornstarch (for dusting)

Instructions

  1. Combine glutinous rice flour and sugar in a microwave-safe bowl. Gradually add water while stirring until you have a smooth mixture.
  2. Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave the mixture on high for 1-2 minutes until it turns translucent and dough-like. Stir every 30 seconds for even cooking.
  3. Let the mochi dough cool until it’s warm to the touch and manageable.
  4. Dusting a clean surface and your hands with potato starch or cornstarch. This will prevent the dough from sticking. Transfer the mochi to the dusted surface.
  5. Gently knead the mochi, adding more starch as needed to keep it from sticking. Aim for a smooth, elastic consistency.
  6. Shape the mochi into balls, squares, or your preferred forms.
  7. And that’s it! Enjoy your homemade mochi immediately or store it in an airtight container.
