Sushi bowls are such a fun way to eat your dinner. You get all of the good ingredients that would normally go into sushi, without the mess of trying to roll it up in seaweed. This way you can get everything you want in an easy bowl form, perfect for themed dinner parties or just a night in at home. The best part is that you can make them vegan without losing any flavor!

Instructions

  1. For this recipe, you do need sushi rice which is slightly different than regular long grain rice. Cook it as normal rice though, the only difference is that at the end, heat rice vinegar and sugar together and pour it over the rice and mix.
  2. Slice up sheets of dried seaweed and ripe avocados and shred some carrots.
  3. Cut up shitake mushrooms and cook them with some sesame oil and soy sauce. Leave to the side.
  4. Defrost some frozen edamame and get the beans out of the pods.
  5. For assembly, first, start by filling a bowl halfway with rice. Then, put in all the ingredients around the bowl so they each have their own space. Drizzle over soy sauce and you are ready to eat!
