Need New Breakfast Ideas? Try These Chia Pudding Yogurt and Berry Parfaits

Making time for breakfast in the morning is difficult, but eating breakfast is essential for getting your day off to the right start. We often grab whatever’s in eyesight and head straight out the door, which leads to unhealthy breakfasts. But, this chia pudding yogurt and berry parfait can be may ahead of time and stored in the fridge covered for up to four days. It’s full of protein and healthy fats which will keep you feeling full. Here’s how to make it.

Ingredients:

  • 1 1/2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 2 cups 0% plain Greek yogurt
  • 2 tablespoons honey
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries

Instructions:

  1. Stir the almond milk and chia seeds in a bowl and then cover and refrigerate them overnight.
  2. Place the Greek yogurt and honey in a bowl and stir unit it’s smooth. Add the berries and stir.
  3. Place 1/2 cup yogurt mix in 4 large wine glasses or 1 1/2 cup storage tubs.
  4. Smooth the top of the mixture and then add 1/4 cup of the chia pudding mixture on top of the yogurt, spreading it evenly.
  5. Put the remaining 1/4 cup of yogurt on top and add 2 tablespoons of the chia pudding on top of the yogurt.
  6. Enjoy!
