Prepare This Delish Summer Vegetable Curry In 30 Minutes

This is one of the tastiest Indian recipes, and you can now make it at home. The vegetable curry takes only half an hour.

Ingredients

The ingredients you need for this recipe are:
3-4 minced garlic cloves
2 tablespoons olive oil
2 teaspoons garam masala
1/2 teaspoon turmeric
1 tablespoon freshly grated ginger
1/2 teaspoon black pepper
1/2 teaspoon ground cumin
1 teaspoon ground coriander
1 diced medium onion
1 14-oz can crushed tomatoes
2 chopped carrots
3 cups cauliflower florets
1 14-oz can chickpeas
2 cups vegetable broth
1/2 to 1 minced serrano pepper
2 cups fresh green beans
1 diced medium baking potato
salt

Instructions

Set the stove to medium heat and add olive oil to a saucepan. Add the onions once the oil is hot and cook them for 5 minutes.

Then include the serrano pepper, coriander, ginger, garam masala, garlic, black pepper, turmeric, and cumin. Cook for one more minute.

Pour in the potato, broth, tomatoes, carrots, and cauliflower. Mix the vegetable curry and wait for it to simmer.

When it does, remove the lid and let it cook for 10 to 12 minutes.

Pour the green beans and cook 10 more minutes.

The next step is to add the chickpeas, mix, then cook for one more minute. The vegetables should be soft.

Take the saucepan away from the stove, add salt to your taste.

Serve it with rice.
