A galette is a very similar pastry to a pie, but is easier to bake for several reasons. First of all, since it’s a free-form dough, you don’t need a special pie plate and if you’re not too artistically inclined, making a galette is definitely the better move. So strap on that apron and let’s get baking.
Instructions
- In a food processor or with your hands mix 1 cup of flour with 1/2 teaspoon of sugar and a pinch of salt.
- Then, add in 3 tablespoons of cold butter cut into cubes and rub it into the flour until it looks like coarse meal.
- Add in another 3 tablespoons of cold butter cut into cubes but only rub it in until the butter is about the size of a dime.
- Finally, slowly add in 1/4 cup of ice cold water until the dough comes together.
- Knead a few times, form into a disk, wrap in plastic wrap and chill for 30-60 minutes.
- Cut up one large apple in slices. If there are extra bits, roughly chop them.
- Toss them in a bowl with 2 tablespoons of sugar and 1 teaspoon of cinnamon.
- Roll out the dough until it’s 1/4 inch thick.
- Put the dough on a baking sheet and place the apples inside the dough up to 1 inch from the edge.
- Fold the edges over, brush them with an egg wash and bake at 400 for 50-60 minutes or until golden brown.
