Ingredients

  • Small, round potatoes (like baby red or gold potatoes)
  • Mayonnaise or a creamy alternative
  • Mustard (Dijon or yellow, depending on preference)
  • Spices: Paprika, salt, pepper, and any additional spices you favor
  • Optional: Toppings like chives, bacon bits (for a non-vegetarian option), or shredded cheese

Instructions

  1. Start by boiling the potatoes until they’re tender but still firm. You’ll want them to hold their shape while being soft enough to eat easily. Once they’re boiled, let them cool, then slice them in half.
  2. Gently scoop out the center of each potato half to create a small well. Mash the scooped-out potato and mix it with mayonnaise, mustard, and your chosen spices until smooth and creamy. Taste and adjust the seasoning as needed.
