Sometimes, making a quick, nutritious, yet delicious meal sounds like an impossible challenge, especially when you’re short on time. Fortunately, this doesn’t have to be the case. Here is how you can make a quick, easy, and scrumptious shaved carrot salad.

Ingredients:

  • 6 medium carrots
  • 1/2 teaspoon salt
  • 1/2 cup sliced scallions
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame seeds
  • 1 small clove garlic
  • 3 tablespoons tahini
  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 2 teaspoons ginger

Instructions:

  1. In a medium bowl, whisk together ginger, soy sauce, garlic, vinegar, olive oil, and salt. Once combined, add a tablespoon of cold water and whisk together.
  2. Shave the carrots and then chop the remaining carrots into matchsticks.
  3. Toss all of the carrots and the salad ingredients into the salad bowl and toss with tongs to ensure that they’re well mixed. Drizzle salad dressing over the salad.

Ingredients

  • Salt
  • 1 large lemon
  • 2 15-ounce cans of black-eyed peas
  • 6 ounces bacon, sliced thick
  • olive oil
  • 1 bunch of collard greens
  • 12 ounces cherry tomatoes
  • 1/4 cup apple cider vinegar
  • 12 ounces cauliflower rice

Instructions

  1. Warm a wide saucepan over medium-high heat, tossing in cauliflower rice and olive oil. Begin to stir and add a dash of salt. After about 3 minutes, once the rice has softened, turn off the heat and set the mixture aside to cool.
  2. Chop up the collard greens and put them in a large bowl. Sprinkle a dash of salt and add all of the vinegar and some lemon juice.
  3. Slice up the tomatoes and throw them into the salad. Then, cut the bacon into bite-sized pieces before adding as well.
  4. Drain and rinse the black-eyed peas before adding them to the mix along with the cauliflower rice. Stir the salad until everything is completely mixed up.

Now’s the perfect time to stop by a grocery store and get some for our simple and tasty turnip salad. Here’s the super easy way to make it.

Ingredients:

  • 3 medium-sized turnips
  • 2 scallions
  • 2 tablespoons prepared horseradish
  • 2 teaspoons black cumin
  • 1 teaspoon sugar
  • Salt

Instructions:

  1. Peel the turnip. Cut it in the preferred shape, although we recommend lengthwise slices.
  2. Remove the green part of the scallion. Chop the white part in a way you would usually do when making a salad. 
  3. Combine the turnip slices in a bowl alongside the chopped scallions, sugar, and a pinch of salt.
  4. Mix the ingredients together using your hands. Make sure you thoroughly rub the turnip slices against sugar, salt, and scallions, as it will make them tenderer.
  5. Add horseradish and black cumin and combine with the rest of the salad using a fork or a spoon.
  6. Serve on a plate or dig in straight from the bowl.

There are few things quite as satisfying as a perfectly balanced salad made from only the freshest ingredients. It soothes the taste buds as the same time that it nourishes the body. If you’re a foodie on a health kick, you simply must try this delicious and refreshing salad. Perfect for brunch, lunch and dinner, there are few dishes quite as versatile for you to have in your arsenal.

Ingredients

To make this salad sublime, you need the right ingredients. Similar to a Greek salad, it’s based around feta cheese, kalamata olives, tomatoes, lemon juice, and olive oil. However, you will also need some avocado, kidney beans, red onion, and spinach.

Proper Preparation

The convenient thing about making salads like this one is that they’re really quick and easy to make. Once you have the right ingredients, it’s mostly a matter of throwing the ingredients together correctly.

Firstly, prepare a bed of lettuce on your plate. Then, you must chop your red onion into long strands rather than little pieces, which makes for a much better aesthetic. Chop your avocado into thin slices when it’s ripe and soft, and when you’re done, and them both to your plate.

The rest of the ingredients can be added much more leniently. Once they’re all added, they’ll taste like a dream.

Adding the Spices

When all the ingredients are prepared, add some olive oil, and mix it in. Afterward, season the whole thing with salt and pepper. If you really want to get fancy, add a touch of garlic with some balsamic vinegar. Enjoy!

Have you ever experimented with fennel before? This curious plant, whose bulbs, seeds, and leaves are all used in different cuisines around the world, can be hard to find but it’s a culinary godsend when you know how to use it. One of my favorite ways to use fennel is as the base for a tasty salad which uses its bulb to make a refreshing side dish. Here’s how to prepare it!

Ingredients

  • 2 fennel bulbs
  • 2 tablespoons olive oil
  • 2 lemons, juiced
  • 1 ½ tablespoons chopped parsley
  • 1 ½ tablespoons freshly shaved Parmesan cheese
  • Salt and pepper, to taste

Instructions

The first thing you’ll want to do in order to make this dish is to slice the two fennel bulbs, after washing them, as thinly as possible. If you have a meat slicer, this can help! Once done, place the slices in a bowl.

Next, add the juice of two lemons, the olive oil, and the chopped fresh parsley to the mix and stir. Finish it off by topping it with the shaved parmesan along with salt and pepper to taste. Chill before serving and enjoy while cold. Bon appetit!

There’s nothing like a delicious and fresh vegetable salad. This one happens to be made with vegetables featuring five colors and it’s nutritious, refreshing, and suitable as a meal or as a delicious side dish to any dinner table. To make this yummy dish, all you need is a handful of veggies and 10 minutes. 

Ingredients:

For The Salad:

  • 1 cucumber
  • 1 red pepper
  • 1 yellow pepper
  • 5 cherry tomatoes
  • 1 ripe red tomato
  • 6 pitted black olives
  • 2 tablespoons corn kernels
  • A handful of fresh oregano leaves or basil leaves

For Seasoning:

  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Tablespoon fresh thyme
  • Salt and pepper to taste

Instructions:

  1. Finely chop all the vegetables, one by one, and place them in a large mixing bowl. Add the olives and corn, and mix.
  2. Add all the sauce ingredients and mix well.
  3. Sprinkle fresh oregano and basil on top, and serve immediately.
  4. To the basic salad, you can add a generous slice of feta cheese, tahini sauce, hard-boiled egg, smoked or roasted salmon, canned sardines, or roasted tofu.

This classical middle eastern meze is easy to make and will upgrade almost any meal. You can serve it as an appetizer or as a side dish when making BBQ. Make sure you get very fresh eggplants, it will make it even tastier.

Ingredients

  • 2 medium-sized eggplants
  • 2 garlic glove
  • 4 tablespoon of extra virgin olive oil
  • ¼ cup of tahini
  • 2 tablespoon of fresh lemon juice
  • 1 teaspoon ground cumin
  • salt

Instructions

  1. Grill the eggplants on an open fire (or in a preheated oven at 390°F) until the skin completely burns. Turn them occasionally.
  2. Let the eggplants rest and chill for a few minutes and then remove all of the skin and chop the top part off. Move the flesh of the eggplants to a large bowl.
  3. Add to the bowl the tahini, lemon juice, olive oil, cumin, and salt and mix well. Check out the seasoning and if needed, add some more salt and lemon juice.
  4. Move the dip into a serving bowl and serve with fresh pita bread. Enjoy.

Ingredients

  • Tomato
  • Cucumber

  • Can of chickpeas

Instructions

If you’re a foodie on a health kick, you simply must try this delicious and refreshing salad. Perfect for brunch, lunch and dinner, there are few dishes quite as versatile for you to have in your arsenal.

Ingredients

To make this salad sublime, you need the right ingredients. Similar to a Greek salad, it’s based around feta cheese, kalamata olives, tomatoes, lemon juice, and olive oil. However, you will also need some avocado, kidney beans, red onion, and spinach.

Proper Preparation

The convenient thing about making salads like this one is that they’re really quick and easy to make. Once you have the right ingredients, it’s mostly a matter of throwing the ingredients together correctly.

Firstly, prepare a bed of lettuce on your plate. Then, you must chop your red onion into long strands rather than little pieces, which makes for a much better aesthetic. Chop your avocado into thin slices when it’s ripe and soft, and when you’re done, and them both to your plate.

The rest of the ingredients can be added much more leniently. Once they’re all added, they’ll taste like a dream.

Adding the Spices

When all the ingredients are prepared, add some olive oil, and mix it in. Afterward, season the whole thing with salt and pepper. If you really want to get fancy, add a touch of garlic with some balsamic vinegar. Enjoy!

One of my favorite ways to use fennel is as the base for a tasty salad which uses its bulb to make a refreshing side dish. Here’s how to prepare it!

Ingredients

  • 2 fennel bulbs
  • 2 tablespoons olive oil
  • 2 lemons, juiced
  • 1 ½ tablespoons chopped parsley
  • 1 ½ tablespoons freshly shaved Parmesan cheese
  • Salt and pepper, to taste

Instructions

The first thing you’ll want to do in order to make this dish is to slice the two fennel bulbs, after washing them, as thinly as possible. If you have a meat slicer, this can help! Once done, place the slices in a bowl.

Next, add the juice of two lemons, the olive oil, and the chopped fresh parsley to the mix and stir. Finish it off by topping it with the shaved parmesan along with salt and pepper to taste. Chill before serving and enjoy while cold. Bon appetit!

Ingredients:

  • 5 large bell peppers
  • 1 chili pepper
  • 3 finely sliced garlic glove
  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • Salt and pepper

Instructions:

  1. Grill the bell peppers and the chili pepper until their skin is completely black.
  2. Let the peppers cool and then peel off the skin. Remove the seeds.

There’s nothing like a delicious and fresh vegetable salad. This one happens to be made with vegetables featuring five colors and it’s nutritious, refreshing, and suitable as a meal or as a delicious side dish to any dinner table. To make this yummy dish, all you need is a handful of veggies and 10 minutes. 

Ingredients:

For The Salad:

  • 1 cucumber
  • 1 red pepper
  • 1 yellow pepper
  • 5 cherry tomatoes
  • 1 ripe red tomato
  • 6 pitted black olives
  • 2 tablespoons corn kernels
  • A handful of fresh oregano leaves or basil leaves

For Seasoning:

  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Tablespoon fresh thyme
  • Salt and pepper to taste

Instructions:

  1. Finely chop all the vegetables, one by one, and place them in a large mixing bowl. Add the olives and corn, and mix.
  2. Add all the sauce ingredients and mix well.
  3. Sprinkle fresh oregano and basil on top, and serve immediately.
  4. To the basic salad, you can add a generous slice of feta cheese, tahini sauce, hard-boiled egg, smoked or roasted salmon, canned sardines, or roasted tofu.

This classical middle eastern meze is easy to make and will upgrade almost any meal. You can serve it as an appetizer or as a side dish when making BBQ. Make sure you get very fresh eggplants, it will make it even tastier.

Ingredients

  • 2 medium-sized eggplants
  • 2 garlic glove
  • 4 tablespoon of extra virgin olive oil
  • ¼ cup of tahini
  • 2 tablespoon of fresh lemon juice
  • 1 teaspoon ground cumin
  • salt

Instructions

  1. Grill the eggplants on an open fire (or in a preheated oven at 390°F) until the skin completely burns. Turn them occasionally.
  2. Let the eggplants rest and chill for a few minutes and then remove all of the skin and chop the top part off. Move the flesh of the eggplants to a large bowl.
  3. Add to the bowl the tahini, lemon juice, olive oil, cumin, and salt and mix well. Check out the seasoning and if needed, add some more salt and lemon juice.
  4. Move the dip into a serving bowl and serve with fresh pita bread. Enjoy.
