Take Advantage of Summer Corn!

Corn is one of the biggest staples and symbols of summer. Its sweet, crunchy kernels take any summertime meal to the next level. There are so many ways to enjoy corn, so pick up a few ears on your next trip to the farmers market and try these delicious recipes.

Mexican Style Street Corn

Corn has been part of the gastronomical history of Mexico for centuries because there are several strands of corn that are native to the country. In Mexico, they make a snack out of corn that is out of this world. First, boil corn as you would until it is cooked through. Then, slather it in mayonnaise to cover the ear. Finally, sprinkle with cotija cheese and chili powder. The sweetness of the corn with the savory mayo and spicy chili is truly an experience.

Corn Salad

Corn makes for a delicious base for any summer salad and gives you a nice break from the usual salads you might make throughout the year. To make this dish, boil corn until it is cooked through, Then, shave off the kernels from the year. A good tip to do this is to use the center of a bundt pan to hold the ear in place while you shave off the kernels. Combine with tomatoes, lime juice, cucumbers, and peppers, and you have a gorgeous and unique salad.
