I am sure you’re all familiar with this feeling as well. Eating a pineapple leaves the roof of your mouth and the sides of your tongue burning and itchy. You maybe thought that it’s an allergic reaction to pineapple, but it’s something else.
The reason we feel that way is because pineapple contains Bromelain. Bromelain is a plant protease enzyme and is regularly used as a neutral meat tenderiser. Bromelain is more concentrated in the hard part of the pineapple, the gem, and this is where you feel this burning and sore feeling more.
