Whether you’re giving them as a gift, or looking to treat yourself, chocolate truffles are always gratefully received. This vegan recipe is quick, simple, and utterly indulgent—if you are making them as gifts, remember to make a few extra for yourself!
Ingredients (for 20 cookies)
- 1 1/2 cups of dark chocolate
- 1/2 cup of coconut oil
- 1/2 teaspoon of vanilla essence
- 2 teaspoons of maple syrup
- 2 tablespoons of chopped mixed nuts
- Icing sugar, to decorate
Instructions
- Melt the chocolate in a microwave or using the Bain Marie method.
- Melt the coconut oil in a pan and stir this into the melted chocolate.
- Stir in the maple syrup, vanilla essence and nuts.
- Let the mix cool a little before shaping into balls. Place these on greaseproof paper and let them set in the fridge for 2 hours.
- 5. Dust with icing sugar before wrapping them up and gifting.
