These Parmesan Crackers are a Great Snack

These super easy to make crackers will make your guests smile as early as the first bite. They are great as an afternoon snack or to accompany a night of drinking. Just don’t expect any leftovers, they are almost addictive.

Ingredients

  • 100 g all-purpose flour
  • 150 g Parmesan cheese
  • 100 g soft butter
  • 20 black olives (without pits)

Instructions

  1. Chop the olives into small strips
  2. Grate the Parmesan cheese
  3. In a large bowl, mix the butter with the Parmesan, the flour, and the olives
  4. Create a long round roll and place in the refrigerator for 1 hour
  5. Preheat an oven to 180 C
  6. Cut the roll into slices of approximately 1 cm thick each and lay each one on a baking tray lined with parchment paper
  7. Bake for 15 minutes.
  8. Serve at room temperature

Mix all ingredients together in a large mixing bowl. 2. Roll the mixture into a 2-inch-wide log, wrap with plastic wrap, and place into the freezer for 30 minutes. 3. Preheat the oven to 325F/165c Remove from the freezer and using a sharp knife, slice the dough log into cracker sized slices. Place the slices onto a baking tray, lined with non-stick baking parchment. 4. Sprinkle with extra grated cheese and place into the oven to bake for 15 to 20 minutes until golden brown and crispy. Remove from the oven and allow to cool, the crackers will crisp up more once cooled. 5. Store in an airtight container and enjoy topped with your favorite toppings.
