Chimichangas are a delightful Mexican dish that combines the flavors of burritos with a crispy, fried exterior. They are a bit less well known than other Mexican cuisine, but are just as tasty. This recipe will guide you through creating the perfect chimichanga at home.
Ingredients
- 2 cups of cooked, shredded chicken
- 1 cup of salsa
- 1 cup of shredded cheese (cheddar or Mexican blend)
- 1 can of refried beans
- 4 large flour tortillas
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Oil for frying
- Sour cream, guacamole, and extra salsa for serving
Instructions
- In a large bowl, mix the shredded chicken, salsa, shredded cheese, ground cumin, and chili powder. Ensure the ingredients are well combined.
- Lay out a tortilla and spread a generous spoonful of refried beans in the center. Add a portion of the chicken mixture on top. Fold the sides of the tortilla inwards, then roll it up tightly from the bottom, securing the filling inside.
- Heat about 1 inch of oil in a large skillet over medium heat. Once the oil is hot, carefully place the chimichangas seam-side down into the skillet. Fry until golden and crispy, about 3-4 minutes per side.
- Remove the chimichangas from the oil and let them drain on paper towels. Serve hot with sour cream, guacamole, and extra salsa on the side.
