Truffles are one of the most indulgent ways to eat chocolate, and when they’re homemade they can be a lovely gift or even a treat for yourself. Check out these recipes, which are surprisingly easy and always delicious.

Chilli and Coconut Truffles

Ingredients (to make 12 truffles):

  • 1 cup of dark chocolate
  • 3 tablespoons of coconut oil
  • 1 red chilli
  • 1 tablespoon maple syrup
  • Cocoa powder for dusting

Instructions:

Heat the coconut oil in a pan. Finely slice the chill (remove the seeds), and fry in the coconut oil for 5 minutes. Melt the chocolate in a microwave and then combine it with the coconut oil. Stir in the maple syrup. Pour into a bowl, and refrigerate for at least 3 hours, until the truffle mix has set. Scoop out small amounts of the mix using a spoon, shape them into balls using your hands, and dust them with cocoa powder before returning them to the fridge where they will keep for up to two weeks.

Berry White Chocolate Truffles

  • 1 cup of white chocolate
  • 1 vanilla pod
  • 1/2 cup of mixed berries
  • 3 tbsp coconut oil

Instructions:

Cook the berries in a pan until they start to disintegrate. Remove from the heat, and put in a food processor with the coconut oil. Blend until a smooth paste is formed. Scrape some of the vanilla out of the pod and add to this paste, stir through. Melt the chocolate and then combine it with the berry paste. Put in the fridge and leave to set for at least 3 hours, then remove, shape into balls, and return to the fridge for up to 2 weeks.
