Try This Creamy Chicken Fajita Pasta

Ingredients

For the chicken fajita pasta, you should get:
8 oz Penne pasta
1 pound boneless skinless chicken thighs
1 teaspoon cumin
1 thinly sliced small yellow onion
2 tablespoons olive oil
1 tablespoon chili powder
6 oz cubed cream cheese
3/4 cup crushed tortilla chips
4 oz shredded pepper jack cheese
kosher salt
3 medium red, green, or yellow bell peppers
sour cream

Instructions

Start by cutting the chicken meat and bell peppers into strips.

Mix the cumin, chili powder and 1 tablespoon salt in a bowl.

In the meantime set the broiler to high. Cook the chicken together with the powder mix in a skillet for 2 minutes. Now, add the onions and peppers. Continue cooking for 3 to 4 minutes.

Pour 2 1/2 cups of water and the paste in the skillet. Wait for the mixture to boil and then let it cook while also whisking it often. When the pasta is cooked to your taste take the skillet away from the heat. This will take around 15 minutes.

In the meantime, the sauce will become thick. Add the cream cheese and stir. It will melt from the heat from the chicken fajita pasta.

Top it off with the chips and pepper jack. Now put everything to the broiler for 2 to 3 minutes.
