Two Fun Chickpea Recipes

Chickpeas are a great ingredient to utilize in the kitchen because they are full of protein, high in iron, and low in fat. On top of all that, they are also really inexpensive to buy, especially if you make them from the dried beans. You can always use them to make hummus, but if you’re looking for something a little more out of the box, check out these recipes.

Chickpeas Soup

This soup is super yummy and smokey and will fill you up from the chickpeas. Start the soup with a regular mirepoix, and then cover the vegetables in smoked paprika, cumin, and salt, and cook for a minute. Add in diced tomatoes and tomato paste and cook for a few more minutes. Finally, add the stock and chickpeas and cook for about 15 minutes.

Chickpea Stir Fry

Although not typically used in Asian recipes, adding chickpeas to stir fry is actually really delicious and gives it a great texture. Add in your favorite vegetables like broccoli, carrots, red peppers, or anything you have in the fridge and saute them in sesame oil. Put in the chickpeas towards the end and pour in soy sauce, mirin, and sriracha. Serve with noodles or rice and you have dinner in a snap!
