Vegan Broccoli Soup Is Your Dream Dinner

Broccoli is so yummy and packed full of vitamins. With that vivacious green color, it makes for the best soup! Although this soup is vegan it has a ton of flavor and tastes so fresh that you won’t miss dairy at all.

Ingredients

For this recipe, you only need one onion, three garlic cloves, 20 oz of fresh or frozen broccoli, 1 potato, and 4 cups of broth. You can always add more ingredients if you want, but this is the basic recipe.

Instructions

  1. Chop up the onion and mince the garlic.
  2. Heat 1 tablespoon of olive oil in a pot and cook the onion until translucent.
  3. While the onion cooks, chop up the broccoli if isn’t in florets yet, and peel and dice the potato.
  4. Put the garlic in for just one minute until it’s fragrant. If you want to add any other spices like chili flakes, nutmeg, or anything like that, do so now.
  5. Throw into the pot the broccoli, potato, and the broth and bring everything to a boil.
  6. Once it’s boiling, bring it down to a simmer and cook for about 15 minutes or until the vegetables are soft.
  7. Dump the soup into a blender or use an immersion blender to make it smooth, season with salt and pepper and serve!
