During the pandemic, many of us have taken up baking bread. One essential in baking bread that you absolutely need is yeast. Nothing will ruin bread that you spent all day making more than dead yeast. It’s super frustrating when your bread doesn’t rise and it all may have to do with the way you’re storing yeast. Here’s how to store yeast so it stays fresher longer.

The first thing you need to know is yeast is a living thing, which means that all yeast expires. All yeast has an expiration date and if it’s not stored properly it will expire sooner. Properly stored yeast lasts for up to four months beyond its expiration date. If you’re in doubt if the yeast is expired, you can proof it by combining yeast with 1/4 cup lukewarm water and 1 tablespoon of sugar and letting it sit for 10 minutes. If it’s still good it will bubble.

Active Dry Yeast

Unopened active dry yeast will last for up to two years after the date it was packaged. Active dry yeast that’s past its expiration should be proofed. Store it in an airtight container in the fridge or freezer.

Instant Yeast

Instant yeast also has a shelf life of two years and it’s best kept away from heat and moisture. After it’s opened, store it in an airtight container in the fridge or freezer.

Fresh Yeast

Fresh yeast usually lasts for two weeks in the fridge and up to three months in the freezer. Your fresh yeast has become dark brown, crusty, hard, or there’s mold, it’s time to throw it out.
